Food Allergy
Immune pathogenesis:
- IgE-mediated
- Cell-mediated (non-IgE)
- Mixed IgE/cell-mediated
IgE-mediated - caused by inflammatory mediators and cytokines released when circulating food allergens bind to specific IgE residing on the surface of mast cells and basophils
Effects:
- Mild allergies - asthma
- Severe allergies - to environmental or dietary allergens may result in life-threatening anaphylactic reactions and potential death

Anaphylaxis - severe allergic reaction of rapid onset affecting many body systems
- caused by release of mediators from certain types of white blood cells
- causes vasodilation and exhibit symptom - itchy rash, throat swelling and low blood pressure

Allergic conditions
Tests
- testing the skin for responses to known allergens (Scratch test - puncture or prick test)
- analyzing the blood for the presence and levels of allergen-specific IgE
Treatments
- allergen avoidance
- use of antihistamines, steroids or other oral medications
