Habitants are people that the Seigneurs let live on their land
farming satisfies their own needs. they do not sell farm products

to ensure that their land grants were kept they had to "recruit" people to farm their land. Aka. Habitants
the Seigneurs got paid by the Habitants in order for the Seigneurs to grind the grain into flour
