Nutrient Content Claims
A claim on a food product that directly or by implication characterizes the level of a nutrient in the food https://www.fda.gov/media/81606/download

"a good source" - contains 10-19% RDI/DRV; "high" - contains at least 20%DV. *cannot claim for nutrients without established DV

low/free - specifically processed. Cannot claim for food naturally free from a thing (ex. fat-free broccoli). OK to say broccoli, a fat-free food.
if similar food expected to contain it (e.g., sodium) and the food has little/none of it, then can claim.
can claim "-free" even if there is no regular version with salt. e.g., spice mix
relative claims: light, reduced, less, fewer, more, added; must have accompanying information
%/fraction of food modified; reference food; amt of nutrient (subject of claim) that is in the labeled and in ference fod.
healthy: if food meets conditions for total, SFA, CHOL, and other nutrients *see appendix B
fresh: when used to mean unprocessed, raw, not frozen/other thermal processing except:
add'n of rapproved waxes/coatings; post-harvest pesticides; mild cl/acid wash on produce, or tx raw foods w/ mild ionizing radiation

statement, symbol, vignettes, other that suggest relationship btwn (1) presence/lvl of substance in food and (2) dz/health-related condition.
related
structure/fn claims: effect that substance has on strxr/fn of body; no ref to dz. label conventional oods/dietary supplements. ex) ca builds strong bones. not pre-reviewed/authorized by FDA.
IF don't have both substance + dz/condition elements, it is considered "dietary guidance"
Limited to claims about dz risk reduction, NOT dx, cure, mitigation, or tx of dz.
all must be approved by FDA
