Red
Cabernet Sauvignon:
- full-bodied/ concentrated cassis/ prominent spice aromas from the new barrel
- lighter: fresh blackcurrent
Zinfandel
unevenly ripen
raising: concentrated, full-bodied, high alcohol, sometimes with small amount of residual sugar.
underripe: red/ black fruits, dried berries, liquorice, subtle herbaceous
Zinfandel Rose/ White Zinfandel: early-picked, fruity, pale in colour, medium sweet and low in alcohol.
Merlot
San Joaquin Vally has the largest plantings.
Monterey/ Napa/ Sonoma: soft, velvety tannin, luscious body, high alcohol, blackberry and plum flavours.
Shiraz
rich, full-bodied or lighter but peppery
Pinot Noir
moderate regions: Russian River Valley, Los Caneros, Santa Marie Valley
gamy, vegetal notes, rich layersof red fruit flavours (red cherry strawberry)notes of sweet spice from oak maturation.
White
Chardonnay
Central Valley: fruity, low or medium acidity, toasty note from oak staves or chips.
Los Carneros/ Russian River Valley: restrained style, less oak
Sauvignon Blanc
Costal regions: high acidity, ripe citrus flavours
