There are a lot of different ways to phrase how these devices are described and an audience's opinion can easily be altered with different language like calling a passive microphone a "wire tap"
The benefits are well shown and market is healthy for good reason, but consumers should understand the pitch and do their research
A google product has an always-on facial recognition camera this is marketed as an increase in personalization as the device changes depending who approaches it.
Devices are shown to genuinly life-improving and extensions of the technology we already use. They streamline everything from internet searches, to online shopping.
Consumer wants vs product realities
People are attracted to what the devices offer and are willing to incorporate them into their lives
Even with just the collection of data for advertising, this tech is still an unnerving reality for many users
Many of the features that these devices have are appealing and can be quite useful
Some might be wary of the full capabilities of the tech while still wanting the features. (see actual features/capabilities)

Actual product features and capabilities
Active and passive microphones with advanced speech recognition and key word settings to turn on.
Some have cameras with facial and gesture recognition.
Connectivity to other devices, even home security systems
Internet connectivity and a connection to the maker of the device.
the subject mainly revolves around advertising and selling data on users. This is because a lot of what is known about how the companies use the devices is from them getting caught doing things they shouldn't like selling marketing data on children.
There are of course potential uses beyond this for much more nefarious means, but these are largely just speculation. This kind of surveillance is not impossible, but it is hard to prove with what is currently known
The company also gets something that can make money off of well after the sale.
Possibilites of use either current or future
China has already implemented facial recognition into their social credit system out in public.
Government agencies already want access to out technology to aid in legal proceedings (apple backdoor news). I
Even if the companies are truthful and not currently using the data maliciously, who is to say that someone else isn't? This may even be an entity without proper authorization to the information.
There was a government proposal to use these devices to identify people for the use of red flag laws based on key words and behavioral patterns
This could be a privacy violation and warrant-less search that would contribute to potential 2nd and further 4th amendment violations.
Experience/testimony (Might work in somewhere)
Like many others, I have had some eerie advertising on my phone and in some cases thought about the product and physically bought it. My experience is not atypical but can add some depth to my analysis.
I bought a cup of gellato from a store, having never said its name or looking the brand up. The very same day, I got an add on a website for not only the same brand, but the exact same flavor that I had earlier purchased
Solutions/Risk mitigation
As long as we have our phones and smart devices there is not much we can other than not purchase more, but what is important is knowing that you are being listened to, maybe not maliciously, but listened to nonetheless.
Misc.
In the conversation around these tech. products, it is important to note that this is a manufacturer/consumer relationship.
These aspects also muddy the waters as there are user agreements and debates on who actually owns what.
These companies do their best to conceal what they are doing and when they are caught doing something they said they weren't there is an overall negative reaction.
