Are polymers of amino acids, joined by covalent (peptide) bonds. Chain called a polypeptide.
Structure
Primary Structure: Primary structure of a protein is its unique sequence of amino acids, determined by genetic information
Secondary Structure: Secondary structure of a protein consists of coils and folds in the polypeptide chain, resulting from hydrogen bonds between atoms.
Folding happens when there are changes in the pH, temperature, or salt concentratio.

Changing Polymers
Breaking Polymers - Hydrolysis: Adds a water molecule, breaking a covalent bond
Building Polymers - Dehydration Reaction: Removes a water molecule, forming a new covalent bond
