GOOSE
Geese have very rich, dark flesh which is usually tender

PHESANT
The breast meat is more delicate in flavour and tender than the legs, which tend to be darker in colour and more sinewy

The flesh is pale, lean and firm, with a subtle gamey flavour
QUAIL
It has a good proportion of lean, meaty flesh to bone and a delicate flavour
When eating quail it is common to eat the bones as well, as they are soft and the meat does not come off easily

OSTRICH
It is lower in fat grams per serving compared to chicken and turkey, and much lower in fat and cholesterol than beef. Most all of the meat from an ostrich comes from the leg, thigh, and back. Ostrich has no breast meat.
