Water-Soluble Vitamins
Vitamins
- It’s essential for reproduction, growth, health, etc.
- 13 vitamins recognised as essential
- They’re required in the body in small quantities for normal cellular function
- Most of them can’t be produced, must be derived from food
Vitamins are a group of chemically unrelated (carbon-containing) compounds occurring in living tissues.
Body Stores
- Water-Soluble: This is stored in the tissues, briefly
- Fat-Soluble: This is stored (mainly in the liver) until needed
- The deficiency takes time to show
- This varies between individuals
Absorption
- They are excreted in urine
- They freely circulate in the water-filled compartments of the body
- Fat-soluble vitamins (Vitamins A, D, K and E) are absorbed first into the lymph then the blood.
Water-soluble vitamins (B Vitamins and Vitamin C) are absorbed directly into the blood and travel freely.
Role of Vitamins: Vitamins are crucial for normal functioning, growth and maintenance of body tissues.
Availability & Stability
- Bioavailability: This is the rate and extent that a nutrient is absorbed and used.
- Vitamins can be destroyed by exposure to light, oxidation, cooking and storage.
