Cassia
Sometimes known as Indonesian cinnamon is one of the world's oldest spices and is obtained from the dried bark of a tree in laurel family. Its flavor is due to an aromatic essential oil that makes up 0.5% to 4% of its composition. It is of a golden-yellow color, with the characteristic odor of cinnamon and a very hot aromatic taste. The pungent taste and scent come from cinnamic aldehyde. Indonesian cassia is widely used in the kitchens, bakeries, meats, beverages in the world, particularly in United States and European countries.
