Verdict
This is a relatively straight forward solution that can also be used with any of the food related solutions as there are bound to be waste generated from those as well.
If given enough time to cultivate it could completely replace the current fertilization solution they have employed currently and could provide the client with a return of marrow seeds to replant.
Just to note here, this solution is largely contingent on how we want to approach it. If we want to turn a profit and create the marrows into a sellable composting product the elements will change rapidly. However my suggestion is that we propose this solution as one that will not be sold but will be utilized by the farm itself

Verdict
This can be viable depending on how the client feels. Intensive and possibly costly production might scare them off but pesto is generally a medium to high income product so could sell for a profitable margin
Adding to the risk is an additional layer of possible waste problems relating to the fragile nature of glass contained products and the possibility of massive stock losses when not secured/packaged or boxed properly

Might not be so viable as remote location and high initial capital investment might prove to costly for client.
Since we want to provide a low cost solution, the heightened logistical and operational costs greatly reduce the viability of this solution
Since marrows lack a very distinctive taste, it is much more versatile as a chip compared to beet and sweet potato which are currently sold by woolies. Tried it and it tastes great
It is however a leap towards creating sustainable "snacks" that are healthier to the low cost market. Which is a massive social contribution

Very similar to pesto production. Can be done together with pesto production to increase market penetration as many of the same goods need to be sourced.
