Enzymes work like a lock and key, They work on a specific reaction due to their active site. Only one type of substrate will fit into the active site, The correct substrate will fit into the enzyme and allow the substrate to break it down into its different products. These are released and the enzyme can be used again

Salivary glands produce amylase which breaks down the starch into maltose. The teeth mechanically breaks down the food to increase it's surface area
Stomach pummels food, produces protease, pepsin. It also produces HCL to kill bacteria and give the right pH or the protease enzyme
