Pure water is a water source that has all it's impurities removed. Pure water can be purified by carbon filtration and ultra-violet oxidation

Filtration- a wire mesh screens out large twigs and the gravel and sand beds filter out any other solid bits.
Sterilisation- the water is sterilised to kill any harmful bacteria or microbes. This can be done by bubbling chlorine gas through it or by using ozone or ultraviolet light. .
Pure water only contains H20 molecules whereas potable water can contain lots of other dissolved substances.
For potable water it is important that the levels of dissolved salts aren't too high. It also has to have a pH between 6.5 and 8.5 and it doesn't have bacteria or other microbes in it.

When it rains, water can be either collected as surface water(lakes, rivers and reservoir) or as groundwater(in rocks called aquifers that trap water underground).
The source of fresh water used depends on the location. Surface water tends to dry up first so in warm area the main supply of water comes from groundwater.
In countries where it rains a lot they can get their source of water from the surface. This is where they can get it from reservoirs and as it rains a lot the amount of water in reservoir isn't affected and the water doesn't evaporate.
