Factors influencing food choice
Religion
Buddhism - many are vegetarian or vegan -
avoid foods where animals are harmed -

Various religious celebrations involving food e.g. pancake day, lent, good friday, easter, christmas
Hindusim - Many are vegetarian - Some practise fasting - cow is scared so beef isn't eaten - onions and garlic only eaten occasionally - no alcohol is consumed by many Hindus - various religious celebrations
Islam - dietery laws written in Qur'an - Lawful food is 'halal' - Pork, pork products aren't consumed and alcohol - various religious celebrations involving food -
Judaism - Jewish food laws called Kashrut - Food that is allowed is 'Kosher' - Pork, shellfish isn't eaten - dairy foods and meat should not be prepared or cooked together - various religious celebrations involving food.
Dietary laws are called I-tal - food must be natural and clean and include plenty of fruit and veg - pork and fish longer than 30cm aren't eaten - many don't drink alcohol, milk or coffee - religious celebrations involving food -
Sikhism - Many Sikhs are vegetarian - some Sikhs do not drink alcohol, tea and coffee, religious celebrations involving food.
Food Intolerance
Symptoms
Constant tiredness and weakness
Eczma and dry skin conditions
Nausea
Muscle and joint aches and pain
Pain and bloating in the abdomen
Diarrhoea
Lactose intolerant
Lactose = natural sugar and milk
People with lactose intolerance cannot digest it, so bacteria in the large intestine break down
Causes bloating, flatulence, abdominal pain, diarrhoea, nausea
Lactose intolerant people must avoid drinking milk and eating milk products
It is possible to buy lactose-free dairy products e.g. milk and yoghurt
Coeliac disease
Coeliacs have an intolerance to the protein gluten
Gluten is found in wheat, oats, barley and rye - coeliacs must avoid any food that contains them
In the small intestine, the Villi, the inside and the nutrients are absorbed through them into the bloodstream
Gluten intolerance causes the villi to become very small and deformed so not enough nutrients are absorbed
there are many gluten free products available to buy in the supermarkets
the symptoms can be anaemia, lack of energy, tiredness, weight loss, children do not grow properly
Food Allergy
Food Allergy
Anaphlyactic shock - severe and dangerous reaction - mouth and throat swell, cannot breathe, swallow or speak properly - must have medical treatment immediately
This can happen in a few seconds, minutes or hours after eating the food
It can be life threatening
Someone with a food allergy has a serious reaction to certain foods or ingredients in foods
An allergic reaction by the immune system in the body reacting and producing histamine which causes various symptoms: skin rashes, itchy skin, nose and eyes, wheezing, coughing, swollen lips, eyelids, face
Food Allergens
An allergen is something that causes symptoms of a food allergy
Common foods that cause allergic reactions include: eggs, milk, fish, shellfish, peanuts, other nuts, seeds, soya, some preservatives, strawberries, kiwi fruit, celery, celeriac, mustard, sulfur dioxide, sulphites
Someone who is allergic to one or more foods must avoid eating them and read food labels very carefully in case they appear in the ingredients list
Known food allergens must be shown on a food label by law

They are used to attract consumers to buy a product
They are designed to by eye catching, colourful, have attention-grabbing names, words and slogans to appeal to different target groups
