Gordon is perceived of being an angry chef, anger is related with fire which is related with Swan matches.
Swan Vestas come in a format of "cook's matches" which have an extra long stem, however Vestas work just fine for lighting stoves in a kitchen.
There is the problem that a lot of catering equipment does not have a gas lighting system in place, or if they do it does not work anymore.
I personally know people which use lighters to light their kitchen equipment, and have trouble with burning their hand, and have to quickly hold the lighter near the stove.
Obviously there are many issues which come with this, health and safety and time wise. Including the added environmental issues that come with lighters and their disposal.
