specialized stems

runners and stolons: similar to rhizomes, but they produce adventitious buds. runners are usually aboveground, stolons usually belowground.
tubers: food-storage areas at the tips of stolons that have their own nodes (like potatoes and their eyes)
bulbs: large buds with a bunch of fleshy leaves attached to a small stem at the bottom, like onions
corms: similar to bulbs, but the fleshy part is stem tissue, not leaf tissue.

others: tendrils for climbing, thorns for protection, etc.
woody dicot stems
have lots of secondary xylem, aka wood.

older vessel elements and tracheids can become full of things like resins, tannins, and pigments - this is the heartwood. it can't conduct anything anymore, so it only helps support the plant.
newer, still-functioning xylem is the sapwood
