Hydrocarbon only have hydrogen and carbon. If it contains anything else, it is not a hydrocarbon
As the length of the carbon chain changes (the amount of carbon atoms there are), the properties of the hydrocarbon change

When combustion occurs, energy is released. Complete combustion occurs when hydrocarbons are oxidised. Hydrocarbon + oxygen ---> Carbon dioxide + water which is used as fuel
Fractional distillation

Fractional distillation is commonly used to separate crude oil. The oil is heated until most of it has turned to gas. The gases enter a fractional column which is a temperature gradient. The gases condense at different times (depending on the length of hydrocarbon/ boiling point) back into liquids and are drained out of the fractional column. These liquids are used for things like kerosene and petrol

Shorter chain hydrocarbons are used for fuel because they are so flammable. Long chain hydrocarbons are used for things like tar because they are so thick and gloopy
