The only time when they may see below the skin a human body was during a ritual in which they stripped the skin of humans.
They definitely knew something about bone structure, for archeologists have found evidence of cannibalism in prehistoric tribes, so they presumably were also have been knowledgable about the organs of the body.
Diagnoses
It seems, that they used animal organs, such as a sheep's liver (which was uncovered by an ancient archeologist, seeming to have been used for medical research) to make diagnoses on humans.
Doctors

Witch-Doctors would turn up if someone was ill, and would heal with spirituality.
It appears that these people knew nothing about the real nature of disease, so it therefore remains a later discovery/understanding.
Diagnosed by 'looking through a magical trance', thinking of illnesses in a spiritual way.

It is possible, that prehistoric people didn't even know the concept of medicine - that it was meant to heal, or what it was.
It seems that most of their cures were spiritual,

Diagnoses
Diagnoses for illnesses inside the body, were more complected to give than outer-body injuries. For instance, diseases were recognised for what they were , however were usually put to the cause of sin or ghost attacks!
Sickness, was a tricky thing to diagnose, since they did not have the equipment we have today - so the earliest doctors (magicians) literally believed that sickness and disease was caused by an evil magical force.

Cures
Egyptians recognised that there was healing potential in aromas and massages, and so to heal headaches and tension, this is the cure they would give.

Indeed, the mortality rate of Egyptian procedures was very low.
Surprisingly, the Egyptians understood about the cleanliness needed .

Evidence
In 1500 BC, a love poem was written to someone, and in it's context referred to 'Priest-physicians', and how 'their words had not brought him comfort'. Archeologists later found this poem.
