E.g. farmer might sacrifice to Ceres before harvest or sailor might give offering to Neptune before sea voyage

Animal had to be perfect, without any blemish
Certain animals were normally offered to specific gods, e.g. heifer often given to Jupiter

Led it through streets to temple - if animal didn't go willingly or stumbled, seen as bad omen & might start process again with new animal

Overseen by a priest, who covered his head with folds of toga

Animal's head sprinkled with wine & mola salsa (sacred bread baked by Vestal Virgins) while priest said prayer

Soothsayer examined innards to look for omens - if discoloured or mishapen, bad omens declared
