How Butter is Made
The cream is skimmed off of the milk
The cream is churned until the droplets stick to each other
When the milk is cooled and left to stand, the droplets rise and form a layer of cream
As more droplets stick together, the cream thickens to make butter
Tiny fat droplets in milk are suspended in liquid containing proteins, water, carbs, vitamins and minerals
Most of the liquid is drained away
Butter contains Lecithin which keeps the emulsion stable
The small amount of remaining liquid forms droplets within the fat and lethicin, keeping them suspended
How Cheese is Made
The curd is cut up using special knives
The whey is collected and used to make ricotta and as an additive
Rennet is added to coagulate the protein
The curd is stacked in slabs that are turned over regularly
Bacteria is added which turns the lactose sugar into lactic acid
The slabs are heated and put through a mill
The milk is then cooled to 30°C in a large tank
Salt is added and the curd gets pressed into shape overnight
The milk is heated to 72°C for 15 seconds
The cheese is placed on shelves for weeks or months where the temperature is controlled
