Polysaccharides hold glucose in chains so they can be easily 'snipped off' from the chain by hydrolysis for respiration
Amylopectin/Glycogen are highly branched so are more compact and allow a large number of glucose molecules to be 'snipped off' at once when energy is required quickly
Polysaccharides are less soluble in water than monosaccharides due to their size and their hydrogen bonds being hidden inside the molecule, therefore having less of an effect on the water potential
