Overview of digestion
-
-
-
-
-
Teeth (mechanical) -> Salivary glands (Secretion) -> Stomach (motility/secretion) -> Liver/gall bladder/pancreas (secretion) -> Small intestine (motility/digestion/absorption) -> Large intestine (motility/fermentation/absorption/egestion)
Saliva
-
-
Simple stomached - Mainly mucous saliva, pH neutral for amylase action
Complex stomached - Mainly serous saliva, pH alkaine to buffer forestomach for fermentation, copious secretion
General composition
Mucin (+water=mucus), Amylase (in some), Bicarbonate, phosphate (ruminants), lysozyme/antibodies, protein-binding tannins (lead & bud eaters), urea (ruminants)

Head

Salivation (mucus, also salivary amylase in some species)
Salivary secretion
Non-ruminants
Primary secretion isotonic with blood, at low flow rates becomes hypotonic, at high remains isotonic
Ruminants
Secretion ALWAYS isotonic. At low flow rates PO4 predominates, at high flow HCO3 predominates
-
Chemical breakdown
Secretion of digestive juices (salivary glands, liver, pancrea, stomach glands, intestinal wall glands)
Composition (ions & pH appropriate for action of digestive enzymes, mucus to lubricate and protect mucosa, enzymes)
