LU3 : LIPID
Sterols
- non-polar lipid, have 3 six-carbon rings & 5 carbon ring attach to an aliphatic chain.
- found in plant (phytosterols) & animal (zoosterols)
-
- animal lipid-major sterol is cholesterol while plant lipid beta-sitosterol & stigmasterol
Introduction
-
Lipid
- major component are fatty acid contain aliphatic chain with carboxylic acid group.
- Fat (solid) or oil (liquid)
Nomenclature fatty acid
- parent hydrocarbon named on the basic of number of carbon.
- first nbo refer to number of carbon in fatty acid.
- second number refer to number of double bond.
Phospholopid
- can prevent crystallization at ambient temperature
- are modified of triacylglycerols
- all fats and oil and fat conaining food contain phospholopid.
Waxes
- found on surface of plant & animal tissue to inhibit water loss & repel water.
- commonly added to surface of fruit to slow dehydration during strorage.
- classified according to origin

-
Acyglycerols
- exist as mono-, di- and triester
- name for ester of glycerol & fatty acids
Autoxidation
- can cause fat or fat-containing product unsuitable for consumption.
-
- undesire series of chemical reaction involving oxygen that degrade the quality of an oil.
-
-
- occur when hydrogen atom at a-methylene group in double bond of unsaturated fatty acid removed to form alkyl radical.
- initiate by enzyme lipoxygenese
