Digestion - The breaking down of large, insoluble molecules and breaking them down into small, soluble ones.

Assimilation - Taking digested products from eating and building your own cells and tissues out of them.

Bile

The hydrochloric acid in the stomach makes the pH too acidic for enzymes to work properly. Bile is alkaline - it neutralises the acid and makes conditions alkaline. Enzymes in the small intestine work best in these alkaline conditions.
Bile also emulsifies fats. This gives a much larger surface area of fat for the enzyme to work on - which makes digestion faster.
Emulsification - the break down of large droplets into small droplets, increasing the surface area.
