Liquid-gel transition:
- Change from random coil to triple helix
- In the helical conformation gellan will spontaneously form cross-links with another molecules at very low concentrations (<1 wt%)

thixotropy, pseudoplasticity (shear thinning) and thermoplasticity - solution fluidity can be increase by shaking or warming the preparation
Stimuli: ionic strength ( presence of Na+/Ca2+) / T
- Controlling IS and T, the elastic modulus can be controlled
- :warning: The crosslinking mechanism is reversible
