FORMAL
Do not use abbreviations - DON'T, WON'T, CAN'T, etc.
Spelling - Principal vs principle
Format - get it correct! Don't use the wrong format or you will be penalized
CONTENT - If you are stating something, give a reason why. eg. We need longer break times during recess - give a good justification.
Write in crisp, clear, well demarcated paragraphs
Make sure you have covered all the points that need to be addressed in the question
Subscription needs to be appropriate - eg Respecting, faithfully yours, etc.
INFORMAL
If the question asks you to write a letter to a lady relative, do NOT write "Dear lady relative.."! Specify someone, like "Dear Aunt Mary.." or something, or "Hey Sheetal di!"
Whatever you're talking about (eg prize / jubilee / function etc), make sure you mention the name and what it's for!
