Food Borne Fungi: Food Borne Yeast
False/ Wild Yeast
Difficult to distinguish morphologically and culturally but may be identified serologically.
Some are yeast like organisms which are sometimes placed in the fungi imperfecti group along with some of the more common molds
Represent many genera:
Candida, Debaryomyces, Pichia
Do not display sexual reproduction.
Debaryomyces
Produce:
A pseudomycelium.
A cellular association occurring in various higher bacteria and yeasts in which cells cling together in chains resembling small true mycelia.
Reproduce:
Multipolar budding and also by sexual.
Asporogenous yeast
not producing spores.
Found:
Surface of spoiling foods such as fresh and cured meats, sausage, pickle brine and wines
Kloeckera
Found:
Common in fruits, where they are disseminated and also consumed by fruit lies.
Possess both fermentative and oxidative abilities.
Non spore forming yeast.
Some cause off flavour and turbidity in wines
