Functional Protein- polypeptide chain that is manipulated. Globular proteins are circular and Fibrous proteins are long fibers.

Quaternary Structure- overall shape of protein structure that results from aggregation of the polypeptide subunits.
Amino Acid- organic compound with amino group and carboxyl group. Center is called alpha carbon. This attaches to a functional group (R). The R group determines the properties of the protein. Amino acids are held together by peptide bonds.
Denaturation: When a protein unravels and looses its shape and function because of different pH, salt concentration, temperature, and any other variables.
