At this point in the plot, We have the protagonists Saiyans (Goku,Gohan,Vegeta) going up against Supervillain alien Frieza. Throughout this conflict, We have Frieza constantly telling the Saiyans that they are inferior, dirty "monkeys", beneath him. The Saiyans conclude they cannot win unless they evolve, and change their race into "Super Saiyans", which is a transformation they can undergo to exponentially become stronger.
Eventually, They Achieve "Super Saiyan" and Defeat Frieza, resulting in short-lived peace until the next antagonist arrives. The only problem is, The "Super Saiyan" transformation carries a subliminal message with it. Normally, all Saiyans have black hair, black pupils, but after transforming, They all have blond hair and blue eyes

Screenshot directly from Funimation's streaming website. I opted for this method because curiously, Google images offers no pictures of any Saiyans with blonde hair and blue eyes, but rather green or teal eyes, however If one watches the Japanese uncut version, the blue eyes are revealed.
Later series in the franchise began to depict "Super Saiyans" with Green/teal eyes in combination with Red, Blue and white hair.

Moreover, After the super transformation, there is no further mention or comparison of the Saiyans and Monkeys. Their tails disappear too, thus essentially ending the "Great Ape" trait of Saiyans. So essentially, to evolve past the form of a monkey, the Saiyans had to undergo a blonde hair and blue eye transformation.
