WHAT ARE REFINED CARBOHYDRATES?
• Whole grains: Bran, Endosperm, Germ - Nutritional value are in the bran & germ (contain fiber, antioxidants, vitamins, and minerals)
• When refined, bran & germ are removed to increase shelf life - The endosperm (which contains carbs and some protein) is all that remains
- Grain no longer contains the fiber that functions to slow digestion & absorption
- Because of this, refined grains (like flour) cause our blood glucose to increase quickly
