Medium aperture when taking images of the customers and the staff, so that both are in shot and detailed.
When taking photos of the food, products and drinks that are on sale, use a wide aperture, again to make the detail stand out and make the subjects look more appealing.
By taking photos of the products, food and drink that are on sale, the viewer is then able to see that there is a variety of unique things on sale, showing that there is something for everyone to see and buy.
Could possibly set the camera up on a tripod and use a long shutter speed to show how many people visit the market.
This will then show that the market is a popular place to go, that people will monthly visit.
Get a wide angle shot from the front of the market, capturing all of the other stalls behind.
This will show that there is a lot of markets to see, each offering something different.
