Fish is fine just be aware you live in a landlocked state so please go with frozen. Also it's super expensive.
Cheese must be raw (that means your probably gonna HAVE to get it from Natural Grocers if you get any
Milk...just don't do cows milk, it'll be a lot easier
Exception: If you are at someones house, accept what they give you as much as possible. This is both for the sake of not offending and also because what they offer may be the only option. Do please inform them that you cannot eat pork.
