AS water evaporates from the leaves at the top of the plant, water and dissolved minerals are drawn up the xylem vessels
Gives Surface tension, allowing some small organisms to "walk on water"

Adhesion attracts water molecules to the sides of the xylem vessels, helping support water as it moves up the vessel.

Thermal Properties
a Liquid at a range of temperatures due to the large amount of Energy needed to break the many weak hydrogen bonds
has a high specific heat capacity: it can absorb or loose a large amount of heat energy without a large change in temperature
has a high latent of vaporisation: when a water molecule evaporates it must break the hydrogen bonds with other water molecules which requires relatively large amount of energy.
